According to mythology, fennel was associated with clear vision, strength and youth. In the Middle Ages, it was considered to ward off demons and spirits. Originally from the Mediterranean basin, it spread throughout Europe from the Carolingian period, where it was believed to have medicinal virtues.

Traditionally harvested on St. Michael's Day (September), Elixir de Bruxelles, an original creation of the Brussels Distillery, finds its origin in ancestral recipes based on fennel stems and bulbs.
